Is such a thing worth doing? It'd be pretty obvious what your opponent takes, and it wouldn't take very much strategy imo. Is there a more interesting way to do it?

We found an interesting way to deal with 2 player draft. Here's what you do after you get the boosters.

1- Open the packs and place the cards in one pile, facedown.
2- take the first three cards and put them into three separate pile, still face down without looking what it is.
3- The first player to pick can look at the first card. If he doesn't want it, he adds another card (from the big pile) above the one he doesnt want. Then he looks at the second pile. If he doesn't want it, he adds another card (from the big pile) above the one he doesnt want.
4- if none of the three first pile is good, he can draw the first card on the big pile.

So, this leaves some surprises, and when a pile is crap, it can become better each time somebody puts another card in it.

^^^that's called Winston draft. They ran it at the invitational this year...its actually pretty fun.

My buddy and i once took one pack each, added three land of each color to it and played a game. Its not really draft, Its like a seal where you dont really have a choice on whats in ur deck. (but its really fun)

Yeah, that's called a Mini-Master. I actually wrote an article on that too...but one link is enough self-plugging for one thread.
